How to Make Delicious Lemon Meringue Cupcakes - Swiss Meringue Buttercream!. Light and delicious lemon cupcakes, filled with lemon curd and topped with a light and fluffy swiss meringue buttercream!
120g plain flour
2½ tsp baking powder
2 tbsp milk
1 tsp vanilla paste
zest of ½ lemon
5 tbsp lemon curd

3 egg whites
1 tsp vanilla paste
Preheat the oven to 180c and line a cupcake tray
Whisk together the butter and the sugar until light and fluffy.
In a separate bowl whisk the flour and baking powder.
Add one egg to the butter mixture, along with the vanilla paste and ½ of the flour.
Whisk until combined.
Add the second egg, the milk and the remaining flour and whisk until combined.
Fold in the lemon zest.
Evenly distribute batter into cupcake cases.
Bake in the middle of the oven for about 18 minutes.
Allow cupcakes to cool before decorating.
Place the egg whites and the sugar in a bowl over boiling water and whisk until sugar is completely dissovled.
Remove from the heat and whisk for roughly 20 minutes, until the meringue is light and fluffy and the bowl is cool. You should be able to form stiff peaks.
Switch to a paddle instead of a whisk and mix in the butter gradually. Mix until the meringue thickens.
Add the Vanilla paste and continue mixing for a couple of minutes.
Spoon the meringue into a piping bag fitted with a star nozzle.
Spoon the lemon curd into a piping bag fitted with a small round nozzle.
Core the cupcakes
Fill the holes with the lemon curd and the pipe the meringue on top.
Drizzle lemon curd on top of the meringue.
